Ingredients
  • 12 oz Angel Flake coconut
  • 6 oz sugar
  • 4 oz butter
  • 1 cup flour
  • 1 tsp baking powder
  • 12 egg yolks
Instructions
  1. Filling
  2. Put sugar into pot with about 4 oz cold water
  3. Dissolve over slow fire and let it thicken a bit
  4. Add coconut and butter and stir and remove from fire
  5. Beat 7 egg yolks and add to mixture
  6. Dissolve over slow fire and let it thicken a bit
  7. Add coconut and butter and stir and remove from fire
  8. Beat 7 egg yolks and add to mixture
  9. Pastry:
  10. Place flour and baking powder on board
  11. Knead in 5 egg yolks until dough is soft
  12. If needed add a little water
  13. Press into tarts
  14. Fill with coconut mixture
  15. Bake at 450° for about 20 minutes
