Pasteis de Bacalhau (Salted Cod Fritters)

Ingredients
  • 1 good size slice of codfish
  • 4 potatoes
  • 4 large eggs
  • Pepper
  • 3 clovers garlic
  • Parsley
  • Oil for frying
Instructions
  1. Bake cod. Put aside.
  2. Bake the potatoes.
  3. Mash potatoes and shred the cod, removing bones and skins.
  4. In a large bowl, mix the two ingredients and add parsley and finely chopped garlic.
  5. Add the eggs, one at a time, stirring well with a wooden spoon between each one.
  6. Season with pepper.
  7. Heat the oil.
  8. Mold into shape and fry in the oil until they start to brown.
  9. Drain on absorbent paper and serve hot or cold.
