Macau African Chicken

Ingredients
- Ingredients to prepare chicken:
- 6 lbs chicken pieces
- 2 tsp Chili powder
- 2 tsp minced garlic
- 2 tsp paprika
- 4 tsp five spice powder
- 1 tbl salt
- 1 tsp black pepper
- Ingredients to prepare sauce:
- Oil for frying
- 2 cups shallots minced
- 1 cup minced garlic
- ½ cup paprika
- ½ cup sugar
- 1 cup coconut milk
- 4 tbls peanut butter
- 2 cups chicken broth
- 3 bay leaves
Instructions
- To prepare chicken: Mix altogether and marinate chicken for about 3 hours. Broil in oven and brown all sides.
- To prepare sauce: Heat oil over medium heat. Add shallots and garlic and cook until softened (careful not to burn). Add all other ingredients and simmer for another 15 minutes over low heat. Drizzle a little sauce over each piece of chicken and bake at 350 deg. for 30 minutes. Extra sauce can be served on the side.
- Serve with rice.
